Benji Cook has run Wendell Smith's Restaurant in Nashville for 30 years. Six days a week, he offers a half dozen "meats," including roast beef, baked chicken, catfish, and meatloaf, and 16 sides, such as fried corn, white beans, baked apples, and fried okra. Wendell Smith's is a classic meat and three with the traditional Southern menu of the main course with three sides.
